Many people have noticed an increase in allergies that have mistakenly been attributed to wheat. In fact, many of these allergic reactions are actually caused by chemicals that have been added to the dough, because many producers are not prepared to allow the time necessary for a traditional product.

When we make our bread we do not use the additives and preservatives, as used by many of our competitors.

We allow our dough to rest for twenty hours.  This develops a fuller flavour by converting the starch to sugar naturally; this then caramelizes to produce a tasty crust. 

This resting period gives the low level of yeast we use a chance to break down the gluten naturally.
